2 tablespoons of olive oil |
Preparation |
In skillet over medium-high heat, cook oil 30 seconds. Add mushroom blend, carrots, celery, onions, peppers and garlic; cook 4 minutes. In 6 qt. slow cooker, layer barley, cooked vegetables, corn, tomatoes, broth and 3 cups of water. Cover; cook 4 hours on high or 6 hours on low. Do not stir or remove lid. During last 15 minutes stir in basil. |
